Boxtyeater!!
The other half has indicated she will attempt to make this dish - but needs a recipe. The late Da was a dab hand at it but I don't have the recipe!! I know he grated spuds etc and there was flour and onions I think!
Can you give a step by step recipe? If you keep it simple I might even have a go meself!!
Takes about half an hour????

Re: Boxty
'Tis best to start on a small scale JC until you perfect the knack.
Peel and grate say 5 middling sized spuds, strain and drop into a saucepan.
Add about a cup of flour, a teaspoon of salt and three quarters of a cupful of milk.
Stir this all together so as to have akin to a pancake mix. ( Like a wallpaper paste mixed,)
Whip out the frying pan and rather than cooking oil/lard, grease the pan liberally with butter at normal cooking temp.
With a ladle horse on the mix spreading it all over the pan and leave foe 45 secs or so for either side, maybe 1 min per side.
Open can of Dutch Gold and lamp from pan to plate, using plenty of butter (not spreadable muck) on finished article.*
*Check life insurance policy and healthcare plan prior to opening Dutch Gold can.

Grand Boxty - sure where could I go wrong ....
So the spuds are raw then? Do you find any particular spud better?

Kerr's Pinks are the real deal but no significant difference in any of the others.

Its a heavy and filling dish - recommend it later in the day mullins - or after a feed of pints....

Did anyone ever put onion in it? The late Da used to make amazing Boxty and I seem to recall there was onion in it??

Boiled is the shot J.......More tricky to make though. McNiff's in Aughnasheelin make good boiled boxty - Super Valu in B'more will see you sorted there....
Jayo is on the ball re: onion. Don't like it myself...
